Recent mini-project that came out of us having some spare cake-mix from the seven christmas cakes we’ve been baking for this year’s Christmas shenanigans. These are just dollops of fruit cake mix baked in muffin cases and topped with marzipan and fondant icing. They were delicious, by the way! (We gave most of these little ones to family members, but have been enjoying a couple ourselves.)
