Marzipan Christmas Wreath
A ring-shaped fruit cake covered with coloured marzipan and decorated with coloured and painted marzipan fruits, and some chocolate curls to simulate cinnamon sticks, marzipan holly, and fondant icing candy canes. For a final finish touch, the cake has been given a pearlised lustre (completely edible, and does not affect the flavour).

“‘Twas the night before Christmas” Novelty Cake
A square fruit cake covered with marzipan and fondant icing. A few pieces have been removed and iced over with coloured fondant to mimic the appearance of fruitcake, and three fondant icing mice placed in and around, giving the appearance of a cake that has been nibbled at by the mice! The cake is finished with a seasonal accent of fondant holly.

Midnight Snowfall Cake
A round rich fruitcake covered with a layer of marzipan and fondant icing painted with rich midnight blues and decorated with fondant snowflakes and sugar glitter.

The coloured innards of the cakes
Here are some shots of the rainbow cupcakes I made yesterday for my mum’s 50th birthday. They’re delicious, by the way, even if I did slightly overcook them and my piping is horrendous! If I were to do them again, I’d also change how I put the coloured mix into the cases. I tried to make them flat layers, but had to give up because the mix wasn’t runny enough for that to work. Alas!

Recent mini-project that came out of us having some spare cake-mix from the seven christmas cakes we’ve been baking for this year’s Christmas shenanigans. These are just dollops of fruit cake mix baked in muffin cases and topped with marzipan and fondant icing.
They were delicious, by the way! (We gave most of these little ones to family members, but have been enjoying a couple ourselves.)
